The Rarity And Importance Of Desi Ghee In India

A2 is a unique type of protein that is found in the milk of rare cow breeds. Indian cows have been categorized into 40 categories and some of the most exotic ones include Gir- Saurashtra, Kankarej of Kutch, Tharparkar of Rajasthan, Hallikar of Karnataka, Sahiwal and Red Sindhi of Punjab.

These native Indian cow breeds produce milk with A2 milk whilst most others give A1 milk/A1 beta protein, which becomes A1 ghee.

The pure cow breeds are so far and rare in this country that A2 ghee is a pure rarity. The ‘desi ghee’ available in the market must not be confused with A2 as it is produced with A1 milk which represents the difference in quality, properties, ingredients, and nutrients.

The dairy experts have laid out that the grazing land for cows is decreasing incessantly and so is the principle of cow farming in India. The cost of production for an indigenous cow’s milk is around 40 rupees/litre and around 25-30 litres of milk is used to create one 1kg of A2 ghee .

The cost of producing 1kg of ghee goes up to 1800 INR. The innate principles of material processing to extract A2 out of cow milk suffices for additional time, mentionable cost of production and rarity in the material itself.

How is A2 ghee more beneficial than the rest of it?

A2 ghee is natural and easier to digest because an amino acid called Proline which prevents the hazardous production of BCM-7. Historically speaking, cows have produced only A2 beta-casein protein milk but the intervention of humans by injecting synthetic hormones into cows has resulted in sub-standard proteins.

Optimizes Body Resistance

A2 ghee is an antioxidant food by itself which helps the body with necessary vitamins and minerals.

Strengthens Bones

A2 ghee contains K2 vitamin, which helps in the deposition of calcium in the bones thus making them stronger. It helps in preventing the calcification of soft tissues which saves the body from degenerative diseases.

Enhances muscle growth and burns fat cells

A2 ghee could be called one of the foods with vitamins A D E K which produces Glycogen and protein synthesis in the body while Vitamin E obstructs the free radicals which may hamper the growth of muscles. CLA is a naturally occurring fatty acid in the A2 ghee which itself contains fat-burning properties that burn the energy faster thus getting rid of fat quickly.
